"Sustainability is a key concept of our menu, based on the balance between production and raw materials. We have created a menu aiming at higher production combined with lower consumption of raw materials. Our philosophy is based on managing goods in a way that the value of the final product is preserved while the environmental impact is reduced. We follow practices and techniques in the spirit of zero-waste philosophy and combine successfully local and organic products, achieving both freshness in our ingredients and minimum environmental impact."
